hey helpfulstoner, i also make my cake with a vanilla pudding mix, and usually add the sour cream top partway through the bake.i usually only use cake pans the size of a sheet of pizza dough, so people can just eat it however much they want. the key is to get it done and out the door, so i bake them a little larger than necessary, then freeze them.once ive sliced them, i put them on a silicone baking sheet and put them in the fridge or freezer, and theyre good to go for 3-4 days. i dont actually hang them on my door, because i prefer the cake be on a plate, in the door. if you want, you can cover them with plastic wrap to keep them soft, but ive never had a problem.
